GREEK YOGURT & FRESH FRUIT

By Roxana Vosough & Kelly A. Shannon

"L'occhi mangiano prima" is an Italian saying meaning, it’s all about presentation, as the eyes always eat first. This simple treat is perfect for a nonchalant dessert or a satisfying pleasure in the middle of a warm summer day.

2-3 tablespoons of Greek-style yogurt
Drizzle of Orange Blossom Honey
Fresh in season, fruit* (figs are wonderful this time of year)

A drop of vanilla extract (optional)

Greek Yogurt

First, start by buying plain yogurt. That’s right, plain yogurt – not Greek, as you will get double the amount of plain yogurt for the same cost as a small container of Greek yogurt. Next, place a strainer over a large bowl, line it with cheesecloth, and dump in the plain yogurt. Cover with plastic wrap and refrigerate overnight.  In the morning, discard the whey that has drained into the bowl, transfer the yogurt to a sealable container, and store in the refrigerator.

Fruit & Presentation

Slice up the seasonal fruit of your choice and place flat amidst a round plate. Scoop your practically homemade Greek yogurt into the center of the plate. Add a drop of vanilla extract atop the yogurt (if you wish) and drizzle some honey over the fruit and yogurt. And then, simply indulge.
